PROFILE
Wolfgang Puck is one of the most prolific restaurateurs in the United States, and through his Fine Dining Group began to go international in 2010, opening his CUT steakhouse brand in Singapore that year. Spago, which has been a leader in defining Californian food styles by fusing European, Asian and American influences, opened at Marina Bay Sands in Singapore in 2015, the first venture in Asia for the brand.

AMBIENCE
On Level 57 of Marina Bay Sands Tower 2, and with gorgeous views of the gardens and the bay, Spago has an informal décor of slatted dividers and grey and beige hues, with the dining room complimented by a terrace lounge with an al fresco bar overlooking the infinity pool.
SERVICE
Somehow, Spago has translated the easy, humorous style of Californian service to Singapore, and along with this deceptively casual manner integrates thoroughly good care and knowledge of the ingredients.
FOOD
A fairly concise menu displays just how eclectic Californian cuisine can be. Sushi is brought in from Tokyo’s Tsukiji Market, octopus is from Spain, veal from the Netherlands, lobster from Maine, and the beef is USDA Prime. And this is before the other international influences are considered, such as the laksa and the aioli and the wasabi and the maple leaf. Californian zest and freshness is at the heart of the kitchen, which is helmed by chef de cuisine Greg Bess, who has been here since the restaurant opened and who was previously at the Los Angeles Spago. Some dishes have a Singapore influence, while others, notably the big-eye tuna tartare cones, which were on the first appetiser listing of the first restaurant, are pure California.

SUMMARY
Spago is an excellent venue for a gathering, with its inventive dishes and its views and its friendly service, and with many of the dishes at a surprisingly modest price.
