PROFILE
Joël Robuchon is recognized as having been the most influential French chef of the post-nouvelle cuisine era, and at his peak operated more than a dozen restaurants around the world. Executive chef David Alves, who is from Paris, had worked for Robuchon’s restaurant group since 2001 before being invited to head the Hong Kong venture in 2014.

AMBIENCE
L’Atelier, French for “workshop”, offers counter-style seating around an open kitchen, and has a decor in rich reds and black. Le Jardin has table seating, and a dark-wood ambiance, and looks out to a garden terrace that also has seats. Le Salon de The, on the lower floor, is a cheerful salon that serves bread, cakes, tea, and coffee.
SERVICE
Service is everything that can be expected of one of Hong Kong’s most famous restaurants, and the staff is notably well-informed on the remarkable wine list.

The cuisine is pure Robuchon, modern French dishes served in small and exquisite portions, using seasonal ingredients, and paired with wines from one of the largest and finest collections in town.
